| The origins of Balsamic Vinegar from
Modena go back to the Middle Ages.
In the pages of his ‘Vita Mathildis’,
an abbot called Donizone wrote about a barrel of
Balsamic Vinegar that was presented as a gift to
King Henry II in 1046 by Marquis Bonifacio
di Canossa, the father of Matilda.
Many subsequent reports acknowledge the vinegar
vaults of the House of Estense, which moved to
Modena in 1289, to be the first real home of the production
of Balsamic Vinegar.
